Mama’s Custom Chocolate Chip Cookies

Spring is finally showing up here on the East Coast, and while we soak in the longer days of sun and the warmth on our skin, the nights still hold the chill of the previous season that has left us.

This brings light comfort food to mind.

When the evening gets darker and the temperatures plummet, the warmth of comfort food sounds divine — especially sweet gooey comfort food. I’m not talking middle of the winter-hearty stews or spicy chili.

I’m talking about Chocolate Chip Cookies.

When you mention chocolate chip cookies, everyone seems to have a preference for what makes one perfect. The size, the consistency, whether they are soft and warm or firm and snappy — opinions abound on what makes one just right. Some people use chocolate chips, some use chocolate chunks. Some won’t touch a cookie in which the eggs haven’t come to room temperature before all the magic happens.

I want to share my go-to recipe — the one that never disappoints my family — in hopes that you enjoy this little taste of my home brought to your own.

Mama’s Custom Chocolate Chip Cookies

Serves 18-20

Ingredients: 2 cups all-purpose flour, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 3/4 cup melted unsalted butter, 1 packed cup of light brown sugar, 1/2 cup sugar, 1 tablespoon vanilla extract, 2 eggs, 2 cups semi-sweet chocolate chips.

1. Preheat oven to 375 degrees.

2. Mix together the flour, baking soda and salt and set aside for later.

3. In a large bowl mix together the melted butter, brown sugar, sugar, vanilla, and eggs until well blended. The mixture should be a light cream color with a smooth consistency.

4. Add in the flour, baking soda and salt until fully combined.

5. By hand, stir in the semi-sweet chocolate chips.

6. Drop a rounded teaspoon of dough onto your cookie tray leaving approx. 2 inches for spreading while baking.

7. Bake for 8 to 10 mins until lightly golden brown.

8. Allow to cool slightly then remove from cookie tray to cooling rack.

9. Pour a cup of milk and enjoy Mama’s Custom Chocolate Chip Cookies!

And Spring cookies… Soon the world will be budding with abundance and here at Mama’s Custom Cookies that means my mind is bursting with cookie possibilities just in time for your springtime gatherings. It’s been so cold for too long — I want to taste fresh air and warm breezes wrapped up in my cookies and send them out to be loved. Looking for some ideas this Spring? Mama’s Custom Cookies has some inspiration for you. Mother’s Day is often forefront in people’s minds this season. With it we have some recommendations, depending on your unique mom. Some mothers are gardeners who appreciate bouquets of cookie tulips, daisies, or zinnias sprouting out of watering cans, flower pots, or in classic floral — and delicious — arrangements. Perhaps Mom prefers a gathering of butterfly butter cookies or is more of a tea party person. Just imagine a sweet frosting teapot to delight her taste buds and chocolate edged Earl Grey tea bag shaped cookies baked to melt in her mouth or dip in hot tea, English-style. Have a creative Mom? Bundles of confectionary paint brushes or one cookie camera coming right up! Spring sees a number of births and my mind is already churning with thoughts of gender reveal parties and baby shower favors! Opening a new cookie shop on Long Island is a much bigger undertaking than one might imagine! My life has become a series of inspections, construction obstacles, and picking out colors, styles, textures. New content for this website didn’t materialize out of thin air — I had to provide it! And it’s not easy talking about yourself and putting it out there for all the world to read. Making the multitude of decisions required to bring Mama’s to a more public eye has become my second full time job — all while keeping up with the current orders on my cookie plate. My family may tell me I am “one of a kind” and they wouldn’t trade me for the world, but I think they just want me to bring them home some warm gooey cookies. I’m so busy, I’m surprised they haven’t found another Mama! No, really. I’m never not working, it’s the bane of the budding entrepreneur — Our minds are always churning with new ideas and how to bring those possibilities into fruition. To quote my college-age daughter: “Are you working again? Of course, you’re working — that’s all you do these days. I can’t wait to be home this summer to see how you do it all!” I’m such a lucky Mama — I have a family who supports my dream of bringing Mama’s Custom Cookies into brick and mortar existence and cheers me on along the way. I have to keep telling myself not to bite off more than I can chew — often. When I find that I am and that we are lacking in some much-needed family time, I try to find ways for them to be part of the process so that we can be together. This means that Mr. Mama’s often finds himself playing chauffeur on deliveries while I pay construction bills, organize cookie orders, and brainstorm how to make customer’s cookie ideas a reality from the passenger seat. He gets to be my sounding board when things don’t go as smoothly as I anticipated. He has the front row seat to the entrepreneurial chaos. I know, he’s one lucky guy. As I approach the end of Phase 1 in making Mama’s Custom Cookies more accessible to the public, I already have possible thoughts of Phase 2 swirling in my mind. Until then, I can not help bursting with excitement about finally opening the doors of the Park Avenue store!
